Some of my favorites:

Full Metal Jacket
Platoon
Saving Private Ryan
Deer Hunter
We Were Soldiers
Enemy At The Gates
Bridge Over the River Kwai
Hell in The Pacific
The Dirty Dozen

Watching Saving Private Ryan now and the first 20-30 minutes is pretty intense. Probably the most brutal and violent of any war movie.

Gotta disagree with this. Boot camp was epic/amazing etc. but the actual war portion of this movie kinda sucked IMO.

Apocalypse Now, Saving Private Ryan, and the Deer Hunter are my favs.
