gator rib recipe/suggestions????????

so i'm gettin 10 pounds for saturday, and have not found many recipes on the internet

i'm looing for recipes or suggestions from any of you kitchen-heads

i was thinking about doing a paste syle rub, with; chipoltes, adobe sauce, garlic, and brown sugar. and possibly basteing with beer (maybe newcastle)

i hear the meats fairly lean (hence the basteing to prevent drying) and i also hear its similar to frog and/or chicken.
