teal recipes for the grill

I've got to figure some guys on here can cook some mean duck on the grill. Anybody got anything good to try besides smothering them down in a gravy, it's good but looking to try something different.

quick sear on the grill, keep it rare to med rare

The whole duck?

I'm not sure how you'd do it without making a gravy. It'll dry out/get tough very easily.

Can be the entire duck or in sections. Just looking for something different.

Breasts are very easy. There's tons of ways you can do them, most involving bacon.

The whole duck is best done in a gravy. You could probably cut it in half and grill it, but I think it'd be tough to do without it drying out.

Like tiger paw said. Keep it simple. Rub some olive oil on it, cracked sea salt, and ground black pepper. Medium rare is very important

wrapped in bacon is also good. Cook until the bacon is done

if you do the bacon wrapped thing, cook your bacon about 50% before wrapping the breast , if you start with raw bacon by the time your bacon is cooked the duck is overcooked

I did some beautiful teal breasts last night except they were not grilled.

Dry the breasts very well on paper towels
Salt and pepper and sear in a Tbsp of oil. about 2-3 minutes/side until med rare. remove from pan.

deglaze pan with a cup of red wine, 1/4 cup of balsamic vinegar, 1/3 cup of brown sugar a sprig of rosemary, a handful of blue berries, a cup of chicken stock.

reduce to 1/2. Strain and whisk in 2 Tbsp of butter and top the breasts with the sauce. Was absolutely delicious.

I haven't done it in a while, but it's one of my family's favorite

Teal Quesadillas

I use pepper jack and sharp cheddar and scale back on the spinach a little. Also don't quite cook them to medium.
