I'll make a couple recs, depending on how much you're looking to spend. I'm assuming you're looking for a deer skinning knife, but the "Roach Belly" and "Classic Hunter" are good squirrel skinning knives, as well.

I bought one of these from Smokey Mountain Knife Works a few years ago and have found it to be a very useful knife, especially for only $13. Pretty...NO, but it does what it's supposed to. It rides year round in the glove compartment of my truck.

Slightly more expensive is this model from "Cold Steel." Excellent knife w/ a HORRIBLE name, "Roach Belly."

Cold Steel also makes the "Pendleton Hunter." I have the more expensive version, but the "Lite" version may be better. The more expensive version has a tendency to trap in the handle "stuff" from the cleaning/skinning process.

I've got a pair of buck skinning knives that aren't very expensive. They hold an edge really well for a deer or two and are easy to re-sharpen. Not the best steel ever but it sharpens easily enough to not be aggravating.
