Last bit of left over jambalaya then I decided to make Eggs Benedict. Think I've found a very quick method for Hollandaise sauce and keeping it warm without curdling or skinning.

Probably something like Old Crow that I drank heavily in college, but would puke if I even smelled it nowadays.
