IMO no better deboning knife than a good thin sharp fillet knife.

My only equipment is a couple of very sharp fillet knives and some stainless bowls. Of course I only get steaks and stew meat (for soups).
When I was younger we had a nice commercial grinder and would mix 25% beef trimmings from the meat market (free) and make some delish ground meat. My wife would rather buy ground beef now so I don't grind any. I've had sausage made before, but it's never been better than anything I could buy so I go that route.
Would like to have a tenderizer though.
