Chicken Dolphin taste

Never caught or ate them. I know when they get bigger people call them Bull Dolphin/Bull Dorado/Mahi Mahi but does the taste change for the better or worse the bigger they get?

Chicken dolphin is a completely different species of fish than the Dorado/Dolphin/Mahi-Mahi

kinda but not really, in reality
99/100 "chickens" are just juvenile dorado
there is a smaller and much, much rarer species called pompano dolphin that are sometimes also called chicken dolphin

but, the overwhelming likelihood is that if you catch a small dolphin is just a juvenile common dolphin, that most people call a chicken

besides being a different species, the pompano dolphin doesn't get as big as the mahi-mahi...

I wouldn't say it was rarer than the mahi-mahi, but it definitely is confusing terminology

Taste great, but doesn't freeze well and they can go bad pretty quick. IMO they aren't even worth the time anymore, especially once you see how much meat you get off of one.

NO way, they are just younger Mahi Mahi or which ever name you choose to call them, I have caught hundreds. They look identical to the bigger ones and I have been on offshore charters and the captains have all stated the same thing. They little ones taste as good as the big ones.
