Bay Fishing Tackle Suggestions

OK gang, we are headed to Cape San Blas, FL in a couple weeks. Will be kayak fishing St Joseph Bay for reds, specks, beluga whales, etc. What kind of lures/rigs/bait should I be taking along? When we've chartered in the past, we've always caught and fished live bait in the Destin area. Any sage advice and learned counsel would be appreciated. It is scallop season, so we will be snorkeling in the bay for those as well.
ETA: I plan to bring my heavier freshwater gear. Baitcasters and a spinning rig or two.

Gulp Jerk Shad on a jig head. The Red's eat it up. I go between Blue Pepper Neon and Chart Pepper Neon when fishing the bays in Texas.

Sabiki rig and or cast net for live bait or cut bait is always nice.
Can't go wrong with a Carolina rig with live bait on a point with a nice drop off with current washing through.

oh yea clear water like that, get some light colored plastics. like light green/sandish kind of color.

It looks like that is the case near where we will be. Pig Bayou is across the highway from the house we are renting. Runs around an island in the bay.
