Alligator leg recipe

We killed a 8’10 last night. The tag holder took the tail and other cuts. How should I prepare the legs?

Black iron pot smothered down in a gravy, or sauce piquant is the way to go.

This. That is some tough meat and could benefit from a long, slow cooking to make it tender.

I’m not sure how hungry I’d have to be to eat an alligator leg and I hope I don’t find out

I've used baking soda to tenderize other meat cuts but never with tough azz gator leg meat. Would it work?

Just cook them slow until they melt.

I had them at Grand Isle (the restaurant) in NOLA once served as alligator "wings". Very tough. I agree with the gentleman that said stew them.
