What percentage of flooded houses have already been gutted?

An amazing amount due to the community of Baton Rouge and South Louisiana.

Has to be a large portion, group of people I know have done 15 or so already for people in the group

I don't know,but I know mine is gutted. Just went and sprayed for mold today.

Took a long time to get the stuff out of our house and pack things like dishes. Gutting not so long

Guy on wafb said allow 4 to 6 weeks for wood to dry. I don't really know how long it takes.
I am not living in my house that flooded so I can afford to not sheetrock for that long. Other people,probably not so much.

There is no set time, just need it to get to a certain point with a moisture meter.

My builder said 6 weeks minimum...if you have AC running

After houses is gutted you are better off waiting for all the framing wood to dry before rebuilding. If you're doing stain concrete/overlay you need to wait a few weeks before that process as well.
