Generally they serve legal summons, subpoenas, bank levies, and other certified paperwork associated with civil matters.

Depends on the jurisdiction, but in NY they tend to serve court orders and subpeonas. In that respect they are similar to marshals in LA, but they answer to the court, not to an elected official.
Along those lines marshals tend to turn into little fiefdoms as evidenced by the 6 year old that got killed when his dad got pulled over by two corrupt marshals.

In Louisiana, their key task (and money maker) is evictions. Those in the districts with a lot of rentals can pull in $200k+ a year in addition to whatever full time job they already have by hiring one deputy to go around and do the work.

Actually, a constable, in LA has the same authority as a sheriff, but with limited jurisdiction in his ward only.
In all fairness, if the state wanted to cut the fat, they could start with justices of the peace and constables.
In some jurisdictions they well may serve a purpose but in 99% of the wards across the state, they done one thing, actually two.
One, they get their check out of the mail box. Two, they go cash it.

I know a few guys that did this and there were several instances of these guys getting shot trying to serve papers or an eviction.

Yeah.
Our constables are great, though.
Thankfully nobody I've evicted has become violent. Lots of sad crying that makes you feel bad, though.
