I understand it's comedy/satire but is that more or less how the story goes?

I have to say that I love the Mormon church's attitude towards Matt and Trey bashing them so much.

Not a Mormon, but I lived amongst them for a few years...
The SP episode is based on real parts of Mormonism. But it's cherry picked to play up the satire. And while I do find some Mormon beliefs bizarre, most religions have their fantastical elements, like 88 virgins waiting for martyrs, talking snakes, fitting every species on earth on a single boat, parting oceans, etc etc etc....
