The demand is always there. And the quantity demanded probably increases after Easter, during the summer. So I'm not buying that angle of it.

Look, I understand. Crawfish farmers want to make money too. But don't piss on our back and tell us it's raining. Don't come up with some b.s. about weather or why this year will be a bad crop. Man up and just say, "the price is $2.99 a pound take it or leave it".
I think you're pointing the finger in the wrong direction unless you're buying directly from a farmer. The crawfish you buy this weekend were purchased from a farmer for $1.25, if you pay $2.00+ a pound maybe you should talk to your local retailer.
