The point and shoots that I have used all take way too much time when taking action shots...

I too have been looking for something to bring hunting and fishing. I was looking at the Nikon 3200, but I don't know shite about these things.

I know you said your budget is $700 but if it were me and I wanted some great action shots like the fish jumping and also outdoors scenery. I'd look at a used 7D. It's got lightening quick autofocus (with the right glass of course). You can find a used 70-300 and a 50 1.8 for petty cheap. You'll end up wanting to replace the 70-300 with something better down the road but that 50 will be with you for life (unless you upgrade to a 50 1.4 or 50 1.2).

Try to find a used one with a metal mount. They can be found for $100 if you look hard enough. Used 70-300 is cheap too. So for around $1000 you've got a great setup for action as well as portraits/landscape.

Canon has yet to replace the 7D or offer a mark II because it's predecessor has to be something amazing.

It's also weathersealed/dustsealed (not water proof or dust proof) so a little splash or dusty winds won't effect you.

Any will do fine. Brand loyal people will point you in their direction but you can't go wrong with any of them. Think Canon just released the T5.

Pentax K-30 is great, if you want something weather sealed. I shoot pentax. You can get a Pentax K-500 (16 mp) on Amazon with the 18-55mm lens for $399.

Sony also makes very good entry level cameras.

Any of them will do the trick.

Pentax k-500 with two lenses is less than $500

Their optics are very good, even the kit products.

Your first shot of the Reels, with the Sunset behind, is a very good Composition.
I have a Sony, Non-DSLR, and it has pretty good Optics.
I use Program (Auto), and start shooting. Never stop to Review previous shots - could miss the next Good One. Always disable Flash, shoot through the Viewfinder, with LCD taped over.
I have some pretty incredible results.
