Smoked chicken quarter I smoked Sunday and homemade Mac n cheese.

I've heard of people doing it but have never tried it myself.
Now that you mention smoking, I think this Saturday will be a perfect time to fire up my smoker.

Speaking of putting cheese on the smoker reminds me of something I use to do during my competitive BBQ days, I would buy one of those bologna chubs, cut it in half and sit it over in the corner of my smoker and let it cook for 2-3 hours. Then about 20 minutes before pulling it I'd lather it with some of my BBQ sauce. After 20 minutes I'd pull it, cut it into slices, and make one hell of a bologna sandwich.

And it's super easy. I'd put it over on the far corner from the fire box and let it do it's thing. No need to flip or turn it. Just give it some BBQ sauce about 20 min before you pull it. Made a perfect snack while you're busy working your smoker. You could either make sandwiches or cut it into chunks and eat it with a toothpick. Wash it down with a cold beer.
