I make a mean French Onion soup with 3 types of onions, leeks, shallots, and granny smith apples.
Just not when it's 103 degrees 80% humidity outside.

First time.
I usually use shallots too. I'm lazy and have started caramelizing in the crock pot overnight
Plus I need to make something that reheats well for several days since I can't seem to leave the barn at a decent hour.
