is replacing a toilet easy?

Yes, if you are handy at all. Should take you longer than an hour or two, if you have no issues. Much easier with two people to get the new toilet lined up.

Depending on how handy you are, it's not a difficult task at all. Make sure you have a solid seal on the wax ring and youre good to go. Youre looking at a 1-1.5 hr process, start to finish if you have no idea what youre doing but are handy and can fix stuff.

Yeah, it's not hard. Getting the wax seal seated right is kind of a bitch, though. Make sure you buy 3 or 4 just in case.

In any case, a toilet isn't tough either, just take your time making sure the seal is right.

Very simple
Buy a new wax ring & toilet. Unbolt the old one and remove old wax ring. Put down new wax ring and set toilet in place.
Just don't frick up the flange.

If you have the new toilet and new seal ready to go?
Maybe 45 minutes to an hour
You shut the water off to the old toilet. Empty the water from the old toilet. Unscrew old toilet from floor. Remove old toilet. Remove old seal. Replace with new seal. Install new toilet. Hook up water. Poop.

As said, buy an extra wax ring. Sometimes you can get just the wax for like $3 and other times you have to buy the whole kit but it's worth having an extra to screw one up.
Probably take you 1.5-2 hours. It's not hard, some of it's just time consuming hand tightening plastic nuts and figuring out the directions.
Eta: use a wet vac to suck up all the water, easiest thing.

All the water from the tank drained out on the floor
i noticed the turn knob on the shutoff valve was missing

easy
1) buy new wax ring and closet bolt kit - also recommend new closet supply hose
2) get new toilet. make sure you are change like with like. if a tank type toilet, you need to know whether you have a 10" rough or 12" rough toilet. (measure off the wall to the center on the bolts at the flange)
3) shut off supply stop, disconnect supply connection at bottom of tank, unbolt two closet bolt nuts - remove toilet
4) install bolts and new wax ring on closet flange (inspect flange to make sure its not broken, if so get new flange or a spanner flange repair kit.
5) set toilet straight down on wax ring and make sure bolts go through the bolt holes. install bottom plastic bolt washer, then closet bolt washer/and nut. tighten to its hand tight. DO NOT OVER TIGHTEN or you will crack porcelain. I always use a 6" crescent wrench and hold close to the nut so you dont have torque leverage.
6) set tank on bowl, hand tighten nut. again DO NOT OVER TIGHTEN.
7) hook up water supply tubes. check for leaks and test flushing
8) cut off excess length on closet bolts, install plastic cap over closet bolt
9) take shite, wipe, flush

If you don't break the bolts removing the old toilet, its simple and 30 minute gig.
