I'm going to an ENT tomorrow for chronic sore throat and ear infections.

I've been to my doctor five times in the past three months because my allergies always cause me to have a sore throat and ear infections. The strange thing is that my ears never hurt. I would never know they were infected unless the doctor looked at them.
At first my doctor wanted me to go see an allergy doctor about possibly getting regular allergy shots but then she changed her mind and referred me to an ENT.
Anyone else been through similar? (I just hope it's not my tonsils)

Expect an allergy test to be set up and the results to be weekly shots to help keep them under control.
The prep for allergy tests is a pain in the arse because you can't have a wide list of stuff up to 10 days beforehand including antihistamines and aspirin.

Is this where the poke you in the back with a bunch of needles and see which ones you have a reaction to?

They'll find something wrong with your nose too. That's where their real profit margin is.

Not necessarily the back but, yes, that is the idea.
When I did it they had a plastic contraption with about 30 different potential allergens on it and poked the shite out of my shoulder.
They cover it up and have you come back later to see which ones make welts and how large they are to gauge the allergies and how bad they are.

My allergies have been kicking my arse for a month or so and especially the last 2-3 weeks. Been managing an ear infection and blockage/draining. Haven't been to doc yet but will have to go soon because it's not going away on its own.

What happens if I have a bad reaction before I come back? Will they give me a complimentary EpiPen?

The office I went to had manufacturer coupons for free / discounted epipens and I have to have one on hand whenever they give me shots, including the test day.

Look for an ENT that has an allergies dept. Call and make an appt for the allergy testing. You will save a lot of time and most ENTs do not need a referral.
The appt for the allergy testing will be followed with an appt with an ENT.
Allergy shots stopped my misery. Ceder fever, I am allergic to cedarpine is miserable and debilitating. Especially when you live down south. Up North USA is not so bad.
ETA: most likely you will have to go w/o ANY allergy meds for (used to be 3) they just changed to 10- days before your allergy test. The test is done inside your arms. After they slightly prick you if you want to immediately scratch--- you have big time allergies.

When I had this it was fluid build up behind the eardrum. My ENT put a tube in-in office and watched my eardrum through the scope go to normal.

Did they test you for strep?
Did they treat you with any generalized ENT-based antibiotics?

They do strep and mono tests every time I go to the doctor with these symptoms. They give me penicillin or zpacks every time.
