If you were a king in the Middle Ages, how would you consolidate power

You have to please the Church, your neighboring Kings, your own lords, and your own family and if you don't please every group, you can very quickly have a rebellion on your arse. And also never having enough money.

It seems like every king I've read about recently has had his sons be his undoing. They give their sons land to give them experience ruling before they become king but they also expect their son to follow their exact orders and it always seems to spill into rebellion and while usually it seems like it's nothing more than a super annoyance, it ties up years of a kings life in his prime and money coffers are emptied

If you're talking about high middle ages, no head of state (even popes) held a perfectly sovereign rule. Arguably, most nobles had more autonomy in their authority.

seize church lands. With those proceeds, I finance a standing mercenary army and enrich any nobles and families who need placating. Pope has no army, and the populace cannot rebel due to my army. Nobles support me bc they are getting rich. Any non-conforming nobles must die. No one allowed to build a castle except me, and I'm building many. I'll avoid heavy taxation wherever possible, I will open up trade to the extent possible for a primitive economy. I'll have many mistresses. Many. Bastards all over.

I'd do whatever is in my power to make sure they are all taken care of. You do that, the more power you gain. In reality, you can't make everyone happy so I would have to prioritize based on where I have to gain the most power. I'd imagine the neighboring Kings are the ones I have to make sure are the happiest, I serve in their best interest they would have incentives to keep me around. I'd somehow work something out where the Kings would contribute a small amount to one of the other groups so that I could stretch out my resources.

I'd have eyes and ears all over the place so I could gauge how things are going on everywhere. It really would depend on each specific situation, but I would stick with the basic rule of "don't bite the hand that feeds you" so whoever feeds me the most will get fed by me the most. Whatever groups would rather have me out, I would throw them a bone every once in awhile, just to give them less incentive to do anything extreme.

Henry VIII relied on brutality and genius advisors to get what he wanted. He managed to do whatever he wanted but under the guise of having parliamentary approval.

In OP's scenario there's no parliament to contend with but the same idea remains.

He was still the only British crown head between Magna Carta and Cromwell to get his way more often than not.

Step one get rid of the church and organized religion. Still teach certian morales.
Practice what you preach and be honorable and live by the laws. Hold people to that standard
Relate to the common folk. Work with, dine with and entertain them.

Get them to love you and to respect you and the laws you set forth. Any nobleman who aren't in line get killed.

Just be Ned stark but not as stupid

For sure. His advantages started with a full treasury thanks to his father, a genius advisor in Wolsey and then even more so with Cromwell, and a weakened nobility thanks to his father.

You'll be excommunicated and the kingdom placed under interdict. The people will be pissed and ambitious nobles will harness their resentment. You better be ready with the army bc people take their organized religion seriously back then.
