I'm grounding pork belly and prime rib together to make a hamburger. Gonna stuff it with blue cheese, caramelize some onions and mushrooms in a balsamic reduction, and put some pickled green tomatoes on top.
Doing restaurant week shite with the lady. Hopefully we only go to one.

Closed and reopened as Ridgeline. Hell, it was Holly's when I was at App. Then something else before Canyons.

I bought a grinder a few weeks ago and I've been fricking around with several combinations for patties and sausages. I figured, earlier this week, that pork belly and prime rib was the most decadent combination I could possibly do.

The first time I ever visited Boone, I drove up on 321 via Gastonia (via 64) instead of up through East Tennessee. When I saw the sightlines from Canyons/those houses, I was instantly sold. Damn near the prettiest view I've ever seen, and that includes the Rockies, Alps, and the Scandes.

I'm doing about 85/15 in favor of the prime rib. I know that the belly would be too fatty to hold up over a certain percentage. I just want the flavor of bacon without putting it on the burger. I hate crispy bacon, and 'floppy' bacon isn't rigid enough to work.

@HH... The view is stunning. Been coming up here since 77 and bought this house in 04. Never gets old.
@Oweo yeah just some ham and turkey and sharp cheddar. Have some spicy BnB pickles that are good. No chips though...I really like chips with a sandwich.
