There are a few in BR and maybe a couple in NO.
Bigger cities like Houston, DC, ATL have many African restaurants. They are around you just need to look for them.
What we know To be Caribbean food is basically African food mixed with Indian Food.

I have seen one near Graceland in South Memphis, but I haven't eaten there so I don't know what's on the menu

Good pt; I've always heard traditional Mexican food is not even close to the Tex mex disguised as Mexican food that we eat today.
My pt is also that the history of those people doesn't start with captivity. Cajuns were immigrants from Nova Scotia and France, in search of a new life. Mexicans tilled this land before we took it from them. It paints a completely different perspective for our baseline of them.
We learn about great French empires and schools and I know some schools learn about the. aztecs and some of the great mexican/indigenous empires in Central America.
I think it's time we start encorporating that history knowledge to our African brother and sisters

Yes, greens and starches are big too. Fried fish dishes are big as well.
Jollof Rice - a Nigerian rice/meat dish--- is the forefather to Jambalaya.
Gumbo is basically a soup dish eaten in various African Cultures. We put our own spin on it when it came to the Americans with the Spanish/French/Native influences but I'd say it's 80% an African dish.

Wouldn't that be covered with African studies...i know i see some studying that in college

that menu is incredibly healthy and yummy compared to what I see in the average AA's grocery cart these days (goes for white people too--especially poor ones).
