Was he a real butcher?

Very few of them left these days and none in a grocery store. They are just meat cutters. The product comes mostly finished for them with exact directions on portions.

nah, they are the hermits of the store. I'd say either bakery or deli, but really its the person behind the front desk

Dorignacs still has a good meat department for a grocery store.
I haven't been in a while, but they used to have some of those old toothless guys who could cut up the hell out of some meat. Someone mentioned Fred Flinstone earlier. Describes those guys perfectly.

I spent 2 years working in my best friend's dad's meat market. That little dago could turn a side of beef into a display case full of food in no time.

well into his 50's he would outwork all the teens/20 somethings in that place every day.

every once in a while he would open up a gash in his hand with one of those samurai swords he used, rinse it off, wrap it up and get back to work.

I know you are joking, but my local grocery store sells prime beef and it's phenomenal. I did a 10 lb prime rib roast a few weeks ago in the sous vide cooker and it was as good as it gets.

At my local place most have beards and have to wear those beard nets on their face. Hard to be alpha with beard panties on.
