I'd go spend a night or two in Fredericksburg and then spend the rest of the trip in Austin.

you gave the radius but did not give us your price range you want to spend on the trip or accommodations. that would help us help you figure out a location

also when is the anniversary? so can figure out time of year and events in area during that time

Unless your wife is high maintenance.....
Garner State Park has cabins w fireplace for $150 a night.
It's located in Texas Hill Country on the Frio River West of San Antonio.

Hot Springs, AR isn't a bad spot. Wife and I love it up there. Lake Hamilton is a great lake. Plenty outdoors activities and several good places to eat/drink. Google maps says a little over six hours but I bet you could make it in 5 1/2.
