Just found this song by Mark Knopfler that has some nice instrumentals. I know there are tons more, but it would be nice to get contributions from everyone so I willl withhold more contributions for now.

Of course there are 1.7 million songs with great instrumentals. One I've been listening to recently is "The King Will Come" by Wishbone Ash. I'm a Laurie Wisefield fan; he does a nice solo on this version.
