Thor is the foundation of the whole MCU

The two Thor movies have been less than amazing, but I enjoy them because it carries a lot of the background story for the infinity wars movies. Both movies introduce an infinity stone, Loki was the avengers 1 main villain and ultimately gave us the avengers 2 villain, and he even got a glimpse of the future of what the infinity stones can do. I guarantee the ragnarok events will catapult us into infinity wars. The Thor movies have done most of the leg work for the MCU while some other movies (antman) have been a waste of time.

It definitely does give you a deeper perspective of the story as a whole.

I completely agree with this. The other movies are by far more exciting, but for some reason I get pissed off when people say the Thor movies are terrible. Are they more story driven with less action? Yes, but there has to be a backbone to the MCU that isn't all action

I like the Thor movies. In terms of rewatchability, they are near the top for me.

Thor movies are 1 time only for me.
Boring, slow, unrealistic, and they haven't really done a good job of highlighting his powers and abilities.

Unrealistic? in what what? it's a comic book movie?
I do agree they have not done a good job of highlighting Thor's power.

While Iron Man set up the "science" of the MCU, Thor actually took it significantly further (and Dr. Strange even further).
Thor was super important early because it tied all of that together - IM, Cap/Red Skull, then Thor.
I'm not sure he's the foundation, but his movies do speak more to the history and underpinnings of the MCU.
