Farscape: Peacekeeper Wars
Fringe
Battlestar Galactica
Newhart
Buffy

ETA:

I never watched Six Feet Under. Angel was pretty good, too... Wrapping up with Cordelia, Amy Acker's transformation... but too bad SMG couldn't bring herself to make a cameo.

Seinfeld, Newheart where Susan Plechette wakes up in bed with her husband from a previous sitcom and the entire series had just been a dream, the Scrubs farewell episode.

This probably gets my vote.

Whenever I think about that ending, it reminds me of the episode of married with children where Al wakes up and realizes that peg's whole pregnancy was a dream. It was cool because peg, irl, suffered a miscarriage, and it was the writers way of not making her have to deal with it in front of a national audience.

Also, if you consider it to be a finale, then Firefly's episode the Message.

It was the last broadcast of the show, and it was a powerful episode.

The producers originally wanted her to wear a pillow and go through with the pregnancy storyline

Sagal was outraged and the producers finally backed down

You easily could be right, but I've never seen that anywhere.
