Why are some of them wearing Tennessee orange shirts?

I noticed that too. I immediately thought it was a nod to his affiliation with Tennessee. I think all assistants now wear something that makes them stand out. Usually a red or neon hat. The Tennessee orange definitely stands out on a Duke sideline.

All teams do this now, it's so the coach signaling in plays can be seen easily from the field.

Isn't that why Venables always wears a neon yellow hat?

Yes. Some even put athletic tape on their fingers so the players can distinctly see the signal
