Do people understand what geaux is without the "g"? So why would you need the "O" in front of eaux? It's pretty simple. It's not even something you can say "well it can go both ways".

Most people around the country probably don't even know much about the eaux thing. Hell they probably just think those stupid Cajuns can't spell so I doubt people give a shite we spelled it wrong.
