Because no coach wants their team playing 6 or 7 games in 5 days the week before the only postseason that truly counts starts.

The reward is 1 day rest and the team prior to you burning up their pen.

Because of how many games you'd have to play. No one would have any pitching available for the championship game on Sunday if it was double elimination all the way through Saturday. Now I do think they need to move to a 10 team tournament

this too but the big reason is the expansion. it is now a 12 team tournament instead of the old 8. so they eliminate 4 real quick vis a vie the initial single elimination part and then shorten the end due to above and TV. Regionals start next week end.

It's a dumb format. If they were worried about the tourney going too long why not cut the number of teams instead of butchering the format.
