How does the offseason work for the football coaches?

I know the team is only allowed a certain amount of organized practices. Are the coaches allowed to meet amongst themselves as much as they want and gameplan etc?

There is no NCAA limit to how much the coaches of a team want to meet with each other at any time or if the coaches want to do full-contact drills with each other at any time but the NCAA will not allow them to ask a question in a public forum like the OP's.
That's a "Major Violation" under Loss of Institutional Control.
