Are "coaches" allowed to run in scrimmage?

Been hearing about these NFL rejects coming back to practice with Bama. Then, the Jefferson to Houston got me thinking.
Could a team technically hire a bunch of NFL rejects as "coaches", but they participate in practices as scout players in reality?
ETA: To clarify, this isn't a knock against Jordan Jefferson. I'm happy for his new career, just wondering if my situation would actually work?

Or.....Jefferson wants a coaching career and as a GA at Houston gives him a great start.

It would be cool to see Jacob Hester on the sidelines.
Not that we need help at the RB position, but he's one of my favorite Tigers

Im not sure how this works either. I don't know if you're required to pay these guys and make them a "consultant" or not. I don't think they would be classified as "coaches" though.

Yeah i agree 100% with this about Jefferson. I would be curious about how it works with other teams doing this. What's the rule on this? Is there one?

only problem with this is a team is only allowed a certain number of coaches at practice as well
supposedly Sark never coached at practice and was only involved in breaking down film as a consultant

Yes, coaches can practice. Happens in basketball frequently. Sounds dumb for football, unless your talking not in pads.

Tajh Boyd said on Russillo and Kanell tuesday that he was running scout team QB and imitating Jalen Hurts. They asked him if he was live and he didnt really say yes or no but did say that he dropped his shoulder while running a few times.
