I'm rerouting some water piping from my well, and I was thinking about putting something in the trenches to prevent roots in the future. Is this a thing people do? A chemical?

You should not have a problem as long as the water lines do not leak. Roots will go to a water source.

Same as drain lines. No Leak, no roots.

You really shouldn't have a problem if using PVC and making sure the joints are glued together well.

Clay pipe has had a problem with root growth invading the pipes and cast iron if it is cracked or not joined with a good seal.

My plumber said that you could put rock salt in the trench to help. If your pipes don’t leak, you shouldn’t have a problem, though

Some people claim that roots will work their way into a glued pvc joint. I don't believe it for a second. You should be fine and dandy.

I’ve never had roots growing into a water line but I did have a large root growing under the water line. As it grew in size, it started to push up on the line and eventually got to the point where it caused so much upward pressure that it busted the line and water sprayed like a geyser. Just more info for you.
