Minecraft Server and Game Questions

Hey fellow gamers,
I just recently started playing Minecraft on my Mac so I am still a noob. Like many of you I get addicted playing this game and honestly don't know why, but I digress.
1) Multiplayer: I have tried a few servers only to either be immediately killed by another player or my gear is already maxed out. I am in no way against PVP, in fact in other MMO type games I spend most of my time in PVP. I have been playing nothing but Single Player on Survival Mode and throughly enjoy the gathering during the day and building and fighting at night.
Are there any servers out there where I can build my own place, fight mobs, and still bout in the occasional PVP without getting just slaughtered?
2) Also since I am a noob still any advice from experienced players is very welcome.

I just play to build permanent structures on my survival, hardcore, and creative modes each being on a separate map. I get my PvP fix by playing concept servers like MineZ (DayZ concept) or Hunger Games server. Much less permanent of a loss when you lose.
