I may be in the minority but I like to flour the left over tails and flash fry them.

This makes awesome crawfish poboys.

For the potatoes I like either hashbrowns or like thick fried chips to go with the poboys.

As much as I like boiled crawfish on occasion, I don't like much of anything with crawfish in it. Other than boiled, it's my least favorite seafood option.
