I tweaked the sauce just a tad. Added a touch of heavy cream and some onions I sauteed in lime juice. And instead of shortening I just used vegetable oil to make the roux. Turned out most excellent.
Made some quick refried beans too that were a nice complement w/ some queso fresco on top.

Probably instant ramen 
Not very hungry.. somewhat hungover. Baking biscuits to bring to work for breakfast this week. Might go ahead and do some kind of egg mixture too.
