re: Went to Souga tonight

Ate their tonight after reviewing the thread. No pics because my GD cell phone camera had decided that focusing is over rated.

Got take out and had a chance to chat with the new owner while I waited. Nice guy. Some things of note. 1. He has no connection with the previous operation, he bought the place as a turnkey because he had been looking for a place and it fit his concept. 2. Once they are up and running he plans to expand the menu to include some of his "Italian Grandmothers recipes." 3. They are making their own ice cream from scratch. And the big one for me. 4. They are curing their own meats on site which is where he hopes to really depart from other places. The meats I had tonight did in fact stand out as the stars of the plate. I am a big carnivore so this alone will get me back in the shop.

I had the Pig and Fig pizza (fig purée base, house made Tasso, mozzarella and goat cheese with a spinach chiffonade). Crust was a good homemade middle ground being thick enough to hold up but not so thick that it wasn't cooked through. As someone else noted, light on the sauce so I could taste the toppings. Overall, a legit pie.

Also ordered The Oscar calzone (Pepperoni, chicken, capers, kalamata olive tapenade, red onion and homemade ricotta). This thing was packed with olives and ricotta. Luckily, those are two things I love. If you aren't a ricotta fan, stay away. Another solid choice.

Got both to take home and had a draft while waiting. Glass and beer were cold. Nothing to report there. I will be going back.
