Turkey Breast and chicken wings

Have a small turkey breast I plan to smoke. Interested to hear the pros and cons of injection vs brine. Or just rubbing it and then smoking.

i would definitely brine; I’ve had great luck with brining turkey. Then, if you want, inject it, rub it down and smoke that baby. You can absolutely do all three.

I think a brine is a must for smoked turkey. If done right, it’s tough to beat.

I usually dry brine for a few hours (1/2 teaspoon per pound), then inject the breast with cooking oil. I used to use melted butter, but oil is less mess. I got all this from AmazingRibs.com
