Tuna Steaks w/ pics

Picked up a few tuna steaks tonight.


Three yellowfin steaks came in just under 2lbs

Seared them in a little oil in a black iron.




Made a teriyaki glaze to put on them. Came out a little runnier than I would have liked but tasted great!




Money shot for doneness

Also the veggies are a recipe dug out from one of Meridian's older recipes thought they didn't come out as nice as his, they tasted great!

1/2 cup soy sauce
1/4 cup water
1 1/2 T brown sugar
1T honey
1/4 cup sugar
1 1/2 t minced garlic
1 1/2 t grated ginger
1 t sesame oil

Cook until sugar dissolves

Added
1/2 t cornstarch
1 T of water

Will add more cornstarch next time to try and thicken it a little more

Then what was? Was the tuna too...moist?

Because you should have gotten better crusting than that on hot cast iron.

Yep...That pan has to be smokin' hot to get a nice crust.

Had too much oil in the pan then the last steak that started to get a sear...the pan wasn't quiet hot enough. But all good flavor was still great

Hm. Same one you use for burgers, steaks, chops, etc? Wasn't sure if fish would mess up the seasoning of the pan.

Not been a problem for me. It's not something I do often, but for something thicker like a tuna steak, sure, why not?

I clean it with soap and hot water, dry it with fire, and hit it with a dab of bacon grease.


Back to normal.

I do it all in mine. Tuna, grouper, wahoo, mako, swordfish etc.
