Hey. Im in Australia for the foreseeable future and would love to try this recipe with kangaroo to give me a little taste of home and blow the socks off my Australian "mates." Kangaroo is a real lean meat. Do you think this would work? Do you have a scaled down recipe to make maybe a gallon? If not ill just cut everything down by 4/5.

Any lean meat would work- I think the fatty chicken thighs really helped mine. Marinate it overnight whatever you do. I think cutting down the measurements should work but I'm not an expert on that. Very good recipe, got lots of compliments. Perfect for a cool game day.
