Travel Friendly Tailgate Dish

What is a good dish that I can start bringing to our tailgate? We will be coming from Biloxi and I have a 5 month old at home, so anything that I could possibly make the night before would be wonderful. We usually leave pretty early in the morning (7-8 AM).

We come in from Ocean Springs on Friday nights. One dish that seems to hold up well is that 7 layer taco dip. Frito Scoops hold a good mouthful. Veggie trays and ranch dip or french onion dips are good, too. Most likely somebody else will have something cooking on a grill.
