The temp of the pork when you first put it in wasn't the problem. It got to "room temperature" before it even started really cooking, and getting meat to room temp is a myth that has been busted.
Just sounds like a stubborn cook. Those happen.

I read a while back that the stall is caused by liquid evaporating off the surface of the meat. Foil should work
