I sent a friend in Arky some good andouille and threw in some tasso, thinking that he knew what to do with it.
I asked him how he liked what I sent him and he thought the andouille was really good but didn't like the tasso because it was too salty. I asked him what he cooked with the tasso and he said he ate it like jerky. I wonder why it was so salty.
Tasso may be a bit over that top to put in burgers IMHO.

ALWAYS enough to freeze! A little bit goes a long way sliced up in a pot of cabbage or greens or beans.
I'd think it would be too strong a flavor for burgers or in burgers as well.
