I have a Weber dual probe. It's OK, but I hear good things about Mavericks. The Weber is sometimes finicky about synching up... Make sure you get a dual probe because you can track the temp of your grill surface, as well as your meat.

I really recommend getting the thickest steaks you can get for the reverse sear. I get the thick ones and slice 'em up and serve them family style. It works great because my girls won't eat a whole steak, so taking a slice or two off the larger steak is perfect for them.

I will wait to see what you think of those Trinity beers before I try 'em...

Maverick + Thermapen is the combo I use. Thermapens are great for high-heat instant-reads on meat. Mavericks are better for slow cooking. If you wait, thermapens go one sale for $69 once or twice a year. The small probe and a quick read are great.
