Stuffed tongue question

I bought a stuffed beef tongue from Don's in Scott. I’ve never had one much less tried to cook one. What’s the best way to cook it? I was thinking about smoking it on the egg. Anyone tried that?

I cook mine like a roast
brown, cook down holy trinity, add water and it will make a brown gravy ... cook slow and low until it falls apart

I've never done a stuffed one but I have cooked regular tongue on the egg and it was great. I cooked it at about 275 for an hour or so IIRC

I'm betting it was a bit longer than that if you're not sure. Usually it is cooked for 2-3 hours to get tender.

It's very fatty and had lots of collagen. 175 to be safer and probably a touch more wouldn't hurt you. Like most beef on a pit or smoker, low and slow.
