Stew has carrots, potatoes, celery, etc. in big chunks. Oh and the stew cut of meat. I've never had gumbo with stew red meat; usually chicken, sausage, or shrimp. Stew is 'heartier' in terms of keeping you fuller & warmer in the winter (it's why Yankees cook it all the time). Gumbo doesn't have as much volume in terms of ingredient size but it's still delicious.
