Steak ??

Before I grill my steaks, I always pull them out and let them sit on the counter for 45 mins to a hour to help bring them to room temperature. My question is to you guys is do you S&P your steaks while they are on the counter, or just before you throw them on the grill?? I've always wondered if the salt pulls any moisture out of them? Thx in adv

The bringing to room temperature is a myth.

Salt right before grilling or salt at least 45 minutes before

Salt the night before and don't let them sit out before you grill especially if you reverse sear.

Why specifically if you reverse sear?

I salt while a let them sit on counter for 30 mins
Pepper right before grill
Comes out perfect everytime

Dry Brining Steak
