Sausage Crisis!

I ran out of my mail order Teets sausage but want to make a gumbo on Saturday. Here in TN my options are very limited. I can get Savoires at Publix but it's too spicy and not enough smoke for me. Any recommendations on widely available smoked sausage?

What are you trying to make?

Savoies had reduced their smoke over the last couple years.

Put smoked ham hocks in your broth or whatever kind of hen, chicken, or bird you boil down. Will add a lot of smoked flavoring

It's amazing how hard it is to get decent smoked sausage that isn't a flavored sponge textured meat tube

Has anyone used Conecuh sausage in a gumbo or jambalaya? Kind of worried it will mess up my gumbo.

I use Linguica in my gumbo sometimes and it is very good.

Not in a gumbo. As a side for RB&R, yes. It's....passable.

Yep. It sucks. I don't mind conecuh on the grill. It's greasy and dominates the flavor when it's put in stuff though
