Maybe not what you're looking for but I like to whip up a dipping sauce for fried deer/ duck that consist of:

Mayo
Hot Horseradish
Creole Mustard
Honey
Worchester
Sriracha

It's pretty slamming, imho

a slight variation of LSUBalls sauce (^ vote my brother )

3 T mayo
1 T Sriracha
3 T of Mae Ploy Sweet & Chili sauce
1 T finely minced fresh cilantro

tweak the ingredients according to your taste buds

I would slice deer 3/4 - 1" thick, coat with buttermilk / egg wash, and dredge in Panko bread crumbs ... barely deep fry until medium rare

either drizzle sauce or use to dip
