I cook mine in a separate pot, with just a little bit of vinegar. (Half a teaspoon) until the slime goes away. Keep a cup of water on the side and add if it starts to stick. Usually, by the time my roux is brown and the trinity is cooked down in it, the Okra is ready to add.
