Need knife advice

Planning to buy a high-quality knife as a Christmas gift. Want something both functional and beautiful. Any tips about Japanese? All my knives are German ( and older) so I’m not familiar . Budget is around $250. I’m in NOLA and can shop here or online

Not sure what size knife you are looking for but the Shun 10” chef knife I have has been a good one. I like the thinner blades of the Japanese knives.

I don’t own one, but if someone was going to buy me one I would want a Glestain 10.6 in. (270mm) Gyuto.

There's a boutique knife shop in NOLA called Coutelier if you want to handle some and talk to someone knowledgeable.
Japanese knives have a bit of a learning curve. It helps to know what type of handle, steel, and blade shape you want.

Went through this myself a few months back.
Ended up purchasing this.
Dalstrong 8" Chef knife
Off of Amazon. Shun, Miyabi, Katsu are some of the better one's out there in the $120-$300 dollar range. Also be aware beware that some will say and are Japanese Steel, but are Chinese made. Like the Dalstrong I purchased, which I knew beforehand. I follow this guy on You Tube, I recommend giving him a watch. He knows his stuff when in comes to knives. Good Luck!!

Go to Coutelier on Oak. It's an incredible knife shop with tons of variation in type and brand of knife. and you can hold and fool around with all the knives until you find one that fits your hand perfectly.
They have everything from American mass produced stainless steel to hand forged Japanese carbon steel.
The sales people are very nice and very knowledgeable.

Call the good folks at knifemerchant.com. They are very knowledgeable and have first-class customer service.
They offer finishing sharpening on their Japanese knives. Traditional Japanese knives (but not Shuns) are sharpened to 1200-1500 grit. When I ordered my sushi knife, they sharpened it to 6000 grit for free. It is slightly sharper than a light saber.

This is what I have, as well. Best knife I've ever owned and much more economical than Shun, which pretty much makes a living off of good marketing. My brother, who has a set of Shun knives, wouldn't stop raving about my Dalstrong when he was visiting...he loved the feel of it.
I'd definitely lean Japanese for an everyday knife.

I have several Shun knives and they are all very sharp and durable. The customer service for Shun is great too.

This is an excellent all-arounder. Requires a little care and helps if you know how to sharpen. I've never had a better knife.
Do yourself a favor and go by Coutelier NOLA if you are in the city. Look at some and hold them in your hand and maybe you'll find something you like there.

I’ve been researching this for the past couple of weeks, and I think I’ve decided to go with the Dalstrong Omega Series 8.5 chef knife (think someone linked it earlier).

Hmmmm.....almost 900 reviews on Amazon, 4.5 stars. Lots of people commenting how it beats the shite out of their Shun knives.
Sorry you spent too much on a 'real' Japanese knife when you could've had the same product for a hundo or two less.
